Pumpkin-Cranberry muffins

Joining in Colleen’s “Homemade Holidays Recipe Swap”

Pumpkin-Cranberry muffins

Used the bread recipe on the Ocean Spray cranberry bag.  The bread recipe is a family favorite and to put a twist I made it into muffins.  I was able to get 22 muffins from this batch.

Cranberry Pumpkin Bread (from Ocean Spray)

1 3/4 cups flour 1/2 tsp allspice
1 cup sugar 1 cup pumpkin
2 tsp baking powder 1/2 cup oil
1/2 tsp baking soda 2 eggs
1 tsp cinnamon 1 1/2 cups cranberries coarsely chopped
1/2 tsp nutmeg  

 

Preheat oven to 350 deg F.  Grease and flour 8 1/2 x 4 1/2 x 2 1/2 loaf pan.  Combine dry ingredients in a medium mixing bowl.  Combine remaining ingredients, except cranberries, in a separate mixing bowl.  add dry ingredients, stirring just until dry ingredients are moist.  Add cranberries.  Spread evenly in a loaf pan.  Bake for 1 1/2 hrs or until wooden toothpick inserted in the center comes out clean.  Remove from pan and cool on a wire rack.

For muffins, I used 1 tbsp to fill each cup.  Bake at 350 deg F for 25-30 min.  Check with a toothpick.  Cool in pan for 5 min, remove and cool on wire rack.
