Pumpkin-Cranberry muffins
Used the bread recipe on the Ocean Spray cranberry bag. The bread recipe is a family favorite and to put a twist I made it into muffins. I was able to get 22 muffins from this batch.
Cranberry Pumpkin Bread (from Ocean Spray)
1 3/4 cups flour | 1/2 tsp allspice |
1 cup sugar | 1 cup pumpkin |
2 tsp baking powder | 1/2 cup oil |
1/2 tsp baking soda | 2 eggs |
1 tsp cinnamon | 1 1/2 cups cranberries coarsely chopped |
1/2 tsp nutmeg |
Preheat oven to 350 deg F. Grease and flour 8 1/2 x 4 1/2 x 2 1/2 loaf pan. Combine dry ingredients in a medium mixing bowl. Combine remaining ingredients, except cranberries, in a separate mixing bowl. add dry ingredients, stirring just until dry ingredients are moist. Add cranberries. Spread evenly in a loaf pan. Bake for 1 1/2 hrs or until wooden toothpick inserted in the center comes out clean. Remove from pan and cool on a wire rack.
For muffins, I used 1 tbsp to fill each cup. Bake at 350 deg F for 25-30 min. Check with a toothpick. Cool in pan for 5 min, remove and cool on wire rack.
Mmmm, that sounds delicious!! I love the smell to of baking something yummy :)
